So.. in the beginning stage of dating are virgo men not very talkative?

It's really hard for me to tell if this guy likes me or not because whenever he texts his responses are short.. and just.. uhg.

Don't take it personally, he probably just wants to help you to reach your full potential. If it's any consolation, you can bet that he is far more critical of himself than anyone else.
